Lightly Battered Fish Tacos

Did you know that October 4th is National Taco Day? According to NationalTacoDay.com, Americans eat roughly 4.5 billion tacos every year! Many of us frequent the late-night Taco Bells runs, but I want to share with you one of my favorite kinds of taco that you can try out at home: Battered fish tacos!
When choosing which fish to use, you generally want to go with white-fleshed, mild, saltwater fish because they are the tastiest. This includes snapper, mahi mahi, grouper, flounder, halibut or cod. For my recipe, I will be using cod.
This recipe is extremely simple and tasty, feel free to check out and scroll through the photos below to follow along! Happy cooking & enjoy.
Ingredients:
- 1/3 cup all-purpose flour 
- 2 tablespoons and 2 teaspoons milk 
- 2 tablespoons and 2 teaspoons water 
- 1 tablespoon and 1 teaspoon baking powder 
- 1/4 teaspoon salt 
- 2 teaspoons of paprika 
- Flour Tortillas 
- Cod fillets 
- Lemons 
- Canola Oil 
- Mixed Greens 
Steps:
- Mix flour, milk, water, baking powder, salt, and paprika together in a bowl (this will be your batter) 
- Coat the cod with your batter and drop it into a pan with hot oil (it's important the oil is hot, otherwise the fish could get soggy from soaking up the oil before frying) 
- Flip when the bottom is golden brown, and pull out when both top & bottom color well 
- Warm up tortillas on a pan, both sides 
- Assemble your Taco! Tortilla -> Cod -> Mixed Greens -> 5-Minute Salsa -> Homemade Guacamole -> Slice of lemon squeezed
