Did you know that October 4th is National Taco Day? According to NationalTacoDay.com, Americans eat roughly 4.5 billion tacos every year! Many of us frequent the late-night Taco Bells runs, but I want to share with you one of my favorite kinds of taco that you can try out at home: Battered fish tacos!

When choosing which fish to use, you generally want to go with white-fleshed, mild, saltwater fish because they are the tastiest. This includes snapper, mahi mahi, grouper, flounder, halibut or cod. For my recipe, I will be using cod.

This recipe is extremely simple and tasty, feel free to check out and scroll through the photos below to follow along! Happy cooking & enjoy.

Ingredients:

  • 1/3 cup all-purpose flour

  • 2 tablespoons and 2 teaspoons milk

  • 2 tablespoons and 2 teaspoons water

  • 1 tablespoon and 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 teaspoons of paprika

  • Flour Tortillas

  • Cod fillets

  • Homemade Guacamole

  • 5-Minute Salsa

  • Lemons

  • Canola Oil

  • Mixed Greens

Steps:

  • Mix flour, milk, water, baking powder, salt, and paprika together in a bowl (this will be your batter)

  • Coat the cod with your batter and drop it into a pan with hot oil (it's important the oil is hot, otherwise the fish could get soggy from soaking up the oil before frying)

  • Flip when the bottom is golden brown, and pull out when both top & bottom color well

  • Warm up tortillas on a pan, both sides

  • Assemble your Taco! Tortilla -> Cod -> Mixed Greens -> 5-Minute Salsa -> Homemade Guacamole -> Slice of lemon squeezed

Let me know what you think! #recipe #tacos
