Chicken Katsu Sliders

When it comes to finger foods and football games, I always go with Chicken-Katsu sliders. They are easy to make, and with the quantity of sliders you can make with three chicken thighs, they are so easy to share! Although I'm a huge fan of burgers and hot dogs on gamedays, I discovered sliders are easier because they doesn't require a grill and are extremely filling. They are best served with air-fried, waffle-cut fries, and are by far the best game-time snacks to share with friends. Be careful, they disappear quickly!
Ingredients:
3 boneless, skinless chicken thighs
1/2 cup plain flour
2 teaspoons curry powder
Salt and Black Pepper to taste
2 eggs, lightly beaten
1 tablespoon soy sauce
1.5 cups panko crumbs
Vegetable oil for cooking
Knob of butter
Coleslaw
Hawaiian bread rolls
Steps:
Cut chicken into pieces - roughly the same size as the bread rolls
In the first bowl, place flour and curry powder and season with salt and pepper
In the second bowl, whisk the eggs and soy sauce together
In the third bowl, fill with panko crumbs
Dust the chicken in the flour mixture, shake off the excess
Dip chicken into egg mixture, then coat in the panko crumbs. Make sure to press the panko to the chicken so they adhere well
Heat oil in a large pan on medium heat, then add butter
Once oil is sizzling, cook the chicken until golden and cooked through.
Take out and absorb excess oil
Split Hawaiian bread rolls in half, slightly toast
Assemble: Add coleslaw (you can buy from store) on bun, top with chicken katsu
**You're welcome to add pickles and spread mayonnaise on the roll, but I'm not a fan of either - Your preference
